Chicken Quesadilla
Serves 4
Ingredients
- chicken breasts - 2 cooked, finely chopped
- old el paso fajita spice mix - 1/2 packet
- onion - 1/4 cp, diced
- red pepper - 1, diced
- green pepper - 1, diced
- hormel real bacon bits or 1/3rd cp chopped turkey bacon - 2 tbs, cooked
- monterey jack cheese - 1 cp
- cheddar cheese - 1 cp
- whole grain wraps - 4 (dempsters)
- olive oil
Instructions
- Toss the cooked, chopped chicken in a bowl with fajita mix; drizzle with olive oil, mix and bake at 350 degrees for 10 minutes
- Heat 1 tbs olive oil in a skillet and add onion, peppers and chicken to the pan and cook until the veggies are soft
- Lay out the wraps, and divide the chicken/veggie mix on one half of each wrap
- Sprinkle a small amount of bacon bits and divided cheese over each
- Fold over wraps and bake for 15 minutes at 350, use a sandwich press until the cheese has melted and the wrap has browned, or brush olive oil on both sides of the prepared quesadilla and heat in a large pan until browned and cheese has melted
- Serve with paprika aioli.
