Eggs with a Kick
A quick, delicious breakfast with tons of goodness packed inside!
Ingredients
- eggs - 2 large whole eggs and 4 eggs whites
- onion - 1/4 small, finely chopped
- red pepper - 1/4, diced
- spinach - 1 cp shredded
- garlic - 1 clove, finely chopped
- cottage cheese - 1/4 cp
- sea salt & cracked black pepper
- tobasco sauce - splash
- low milk fat cheddar cheese - 1/4 cp
- yellow mustard - small amount
- bread - 2 slices of Cob's cape seed bread
Instructions
- In a bowl, whisk eggs until they combine; add cottage cheese and whisk some more
- Add in onion, pepper, spinach, garlic and salt & pepper
- In a non-stick pan, sprayed with olive oil cooking spray, cook the eggs until done; top woth cheese if desired (or you can make into an omlette); serve with toast as a sandwhich with mustard
