Roasted Root Veggies
Instructions
- Preheat oven to 400 degrees
- Clean the veggies and cut length wise into roughly 1/4" sizes if your veggies are thick (but check the farmers market for skinny veggies!)
- Toss with salt, pepper, sage and thyme and a little drizzle of oil
- Lay on foiled baking sheet and brush with olive oil
- Bake covered with foil for 20-30 minutes; uncover, shake the pan, and continue to bake approx 15 more minutes until veggies are soft
