Spinach & Feta Omelette
This easy omelette-for-one is a great way to kick start the day!
Ingredients
- egg - 2
- spinach - 1 cp (or arugula)
- light feta cheese - 3cm cubed
- cherry tomatoes - 1/4 cp quartered
- tobasco sauce - a dash
- onion powder - just a dash
- garlic powder - just a dash
- sea salt & cracked black pepper
Instructions
- Blend all ingredients together until eggs are light and fluffy
- Spray a HEATED non-stick skillet (or omelette maker – my new favourite kitchen toy!!) with olive oil cooking spray
- Add eggs and cook through (if using a frying pan, flip about 1/2 way through cooking)
