Bison Soup
This brothy soup is great for cold days; serve with crackers or a fresh bun.
Ingredients
- onion - 1, finely chopped
- expeller-pressed coconut oil - 1 tbs
- ground bison - 1 lb (or extra lean ground beef)
- diced fresh tomatoes - 5 cups
- carrots - 2 large, diced
- celery - 2 stalks, diced
- chicken stock - 8 cups
- dried thyme, dried oregano, dried basil - 1 tbsp. of each
- bayleaf - 1
- sea salt & cracked black pepper
Instructions
- Heat a large pan over low to medium heat. Add the onion and oil and cook for 2 minutes.
- Add the ground bison; sprinkle with sea salt and black pepper; cook until no longer pink
- Add the remainder of ingredients, plus the meat and onions, into a slow cooker and cook on high for 4 hours
- Season with salt and pepper to taste
