Chicken Caesar Salad
A great way to serve this salad minus the creamy dressing, but with all the flavor.
Ingredients
- Salad Base
- romaine lettuce - 1 large head, torn
- grilled skinless chicken breast - 2 cups chopped
- Dressing
- dijon mustard - 1 tsp
- lemon juice - 2 tbsp fresh
- olive oil - 1 tsp
- white wine vinegar - 1 tsp
- worcestershire sauce - 1 tsp worcestershire sauce
- garlic - 1 clove, crushed
- plain plain greek yogurt - 1/3 cup (0% fat)
- Garnish
- freshly grated parmesan cheese - 1/4 cup
- fat-free or low fat croutons - 1 cup
- hormel real bacon bits - 2 tbs
- cracked black pepper
Instructions
- Grill your chicken breasts with salt, pepper and garlic powder, with a drizzle of olive oil; chop and set aside
- Blend together all dressing ingredients and allow to sit for 30-60 minutes if you can
- Toss lettuce with salad dressing, add Parmesan cheese, croutons and bacon bits; sprinkle with pepper
- Serve with chicken
