Pan-seared Steak & Yam
Sometimes, you just gotta have steak! And nothing says steak like mushrooms and onions! Lol. At least, not in our house. Now, normally, we would have cooked these up on the BBQ, but today, we are going to the pan-seared variety, and it worked out perfectly.
First, you want to get your yams going. Preheat oven to 350 degrees. Slice yams in half, place on a cookie sheet, sprinkle with salt and pepper, drizzle with evoo and bake 50-60 minutes or until soft in the centre.
When your yam are almost complete, drizzle remaining oil in a heated non-stick pan and add smashed and chopped garlic, sliced onions and chopped mushrooms. Saute until onions start to become clear.
Make a spot in the centre of the pan and add your tenderloin; sprinkle with salt, pepper, paprika and turmeric.
Cover the pan and cook for approx 5 minutes until the steak is browned on one side; flip the steak, stir the mushrooms, cover again and wait for the other side to cook.
One thing you'll notice about turmeric, is that it's going to give the dish an overall yellow hue. It doesn't affect the flavour at all! You are just getting a mild smokey pepper taste, and tons of benefits that this little yellow spice offers!
Once your meat is cooked through, dish it up with your yams and enjoy!

- sea salt & cracked black pepper
- evoo - 2 tsp
