BBQ Chicken Pizza
You don't need a lot to pack a lot of flavour into this pizza!
Ingredients
- pizza dough - make your own pizza dough, or you can buy a pre-made pizza shell
- chipotle bbq sauce - 1 cup
- chicken breast - 1
- red onion - 1/4 large, julienned
- fresh spinach - 1/2 cup
- real bacon bits - 1 tbs
- low milk fat mozza cheese
- olive oil - to drizzle
- sea salt & cracked black pepper
Instructions
- Preheat the oven to 375 degrees
- Place the chicken breasts in a roasting pan, cover with BBQ sauce and bake until internal temperature reaches 165 degrees (about 50-60 minutes)
- Make your own dough using my favourite recipe here (this pizza recipe makes two pies, and so you will want two sets of dough, or half the pizza ingradients)
- Remove chicken from the sauce and dice into bite-sized pieces; set aside
- Drizzle a small amount of olive oil over each pizza shell and spread evenly
- Spoon about 2 tbs BBQ sauce from the roasting pan over each shell (you don’t need a lot) – I like to use the sauce around the edge of the pan because it has thickened and caramelized a bit
- Sprinkle the red pepper over the sauce
- Thinly slice the mozza cheese and place it evenly over the pizza (it doesn’t need to cover the whole pizza – just enough so that you have a bit of cheese in each bite)
- Divide the chicken over two pizzas and spread evenly
- Top with shredded spinach and 1 tbs bacon bits per pizza
- Drizzle with a small amount of olive oil and sprinkle a small amount of sea salt and cracked black pepper
- Bake at 375 until all the cheese has melted and has started to brown (approx 10-15 minutes)
