Cream of Celery Soup
This is a great soup to serve as an appetizer dish, as you don’t really need a lot of it in order to savour the awesome flavour.
Ingredients
- celery - 4 cps, diced
- potato - 1 medium, diced
- butter - 2 tbs
- onion - 1 medium, diced
- garlic - 1 clove
- white wine - 1/2 cp
- chicken broth - 4 cp
- sea salt & cracked black pepper - dash
- hot cream - 1/4 cp
Instructions
- Dice celery and potatoe so that they are approx the same size
- In a large pot, heat the butter over low-to-medium heat
- Add onion, garlic and celery and cook for 2-3 minutes or until the onion is slightly translucent
- Add the wine and reduced by half
- Add the chicken stock and the potato; bring to a boil, and the simmer for approx 15 minutes, or until potatoes are soft – not mushy
- Remove the soup from heat and purée in a blender on low speed, working in batches if necessary; careful to vent the blender lid to avoid pressure
- Return puréed soup to pot and bring to a simmer again
- Heat cream in a small pot and add to the soup; season to taste salt and white pepper
