Grown Up Tater Tots
Just another variation on our favourite roasted veggie/starch.
Ingredients
- baby potatoes - 8 (approx 360 g)
- olive oil - for drizzling
- garlic - 1 clove, smashed and chopped
- sea salt & cracked black pepper
- parsley flakes
Instructions
- Preheat the over to 450 degrees
- Pierce the baby potatoes with a knife and microwave on high for 4 minutes (covered with a paper towel)
- Line a cookie sheet with parchment paper and place the potatoes on the sheet
- With a heavy glass bowl (or other), gently smash down each potato to approx 3/4″ thick, when the skin has broken
- Drizzle with olive oil and bake for approx 15 minutes until browning
- Remove from the oven and sprinkle with salt, pepper and parsley
