Mini Strawberry Shortcake
This was a big hit at a summer BBQ one year - a few plastic cups and spoons for the little kiddies and it was a breeze!
Ingredients
- cool whip light
- angel food cake mix - prepared
- fresh strawberries - 1 container
- splenda - 2 tbs
- orange juice - 3 tbs
- lemon juice - 1 tbs
- custard filling - (optional)
Instructions
- Using a straw, core the centre of the strawberries, and remove their leaf tops
- Add berries, splenda, orange and lemon juice to a baggie, mixing together and allowing to sit in the fridge for at least 3 hours
- Prep the angel food cake as per the package instructions, allow to cool and dice into small pieces
- Allow the cool whip to sit at room temperature for a while so that it is easier to work with
- In your serving dishes (I like individual sized ones, or for outdoor BBQs, plastic cups from the Dollar Store, like the ones seen here), layer, cool whip, cake pieces, custard filling (if using), strawberries and more cool whip
- Top with sliced strawberries of desired
