No-Bake Protein Bites
A protein-packed treat for your sweet tooth! I have seen variations of this recipe floating around on Pinterest for weeks now, and have had it pinned to my board to someday give it a try; however, it wasn’t until this past weekend at a friend’s corporate party was my true inspiration piqued! Thanks to Laurise for getting my hand into motion on this one! Yours were fabulous, my new friend!!! My ingredients came out slightly different, but that was mostly due to what was in my pantry ;o)

Ingredients
- oats - 2.5 cp uncooked (not quick oats, as these get mushy)
- dark chocolate chips - 2/3 cp
- natural peanut butter + 1/2 tsp sea salt - 1/2 cp (natural peanut butter lacks the flavour we are traditionally used to with the processed version, so add in a sprinkle of sea salt to bring out the peanut-y flavour)
- coconut oil - 1/2 cp, melted
- walnuts - 1/3 cp chopped
- pure maple syrup - 2 tbs
- sunflower seeds - 1 tbs
- chia seeds - 1 tbs
- banana - 1 mashed
- vanilla protein powder - 1 scoop
Instructions
- Mix all ingredients together and let stand in the fridge for about 30 minutes.
- Roll into 1″ balls and keep chilled, trying desperately not to eat them all at once! (NOTE: the original Pinterest recipes on this one called for organic honey, however I find that honey is sweeter than pure maple syrup, so I opted for that – also what I use in my granola, so I was confident about the results.)
