Potato Chowder
Another ‘set it and forget it’ meal. This one brings on the earthy down home flare with hearty ham chunks, served in a warm bread bowl.
Ingredients
- potatoes - 8 cups, diced
- onion - 1/3 cp, diced
- celery - 1/4 cp, diced
- chicken stock - 4 cp
- whipping cream - 1/2 cp
- salted butter - 2 tbs
- white pepper - 1 1/2 tsp
- dried basil - 1 tsp
- thyme - 1/2 tsp
- cooked ham - 1 cp, diced
- sea salt - 1 tsp
- mascarpone cheese - 1 (8 oz) package
- water + flour thickening - 1/3 cp water + 3 tbs whole wheat flour
- chives - for garnish
Instructions
- Combine first 11 ingredients into a slow cooker; cook for 4 hours on high (until potatoes are tender)
- Add flour thickening and blend evenly
- Add mascarpone cheese and blend until completely melted
- Serve in a hollowed out bread bowl and garnish with chives
