Potatoe Skins
Ingredients
- red-skinned potatoes - 3 medium sized
- light parmesan cheese - 1/2 cup shredded
- fresh parsley - finely chopped
- fresh basil - finely chopped
- garlic powder - 1/2 tsp
- sea salt - 1/2 tsp
- chives for garnish
- real bacon bits - optional garnish
- Olive oil non-stick spray
Instructions
- Preheat oven to 425 degrees
- Clean the potatoes, pierce with a fork all around, and bake for 50-60 minutes until cooked through
- In the meantime, mix together cheese, parsley, basic, garlic & salt in a bowl
- When potatoes are done and cool enough to handle, slice into quarters and shave out excess potatoe centre, leaving about 1/4" potatoe on skin
- Place skins in a cast iron skillet ( or foil lined pan), spraying both sides of the potatoes with olive oil spray
- Sprinkle with cheese mixture and bake for approx 10 minutes
Excellent with sour cream topping, or basil mayo dip.
