Spinach Eggs
Breakfast is an easy meal for me... I can eat the same stuff every day, lol. But in the spirit of mixing it up, here's a great little way to do breakfast a little differently.
Heat a non-stick pan and add three pieces of thick-cut bacon (my fav... I mean, who doesn't love bacon?!). Flip only once, and when it's all cooked to your desired crispiness, remove it from the pan and place on a paper towel.
Hint: a good quality bacon won't leave you a lot of grease in the pan. So if yours does, change your bacon. I use Harvest brand from Safeway/Vons and it is by far the least greasy bacon I've found. You can see in the photo below how little fat is actually left in the pan. Some bacon will leave a good liquidy layer on the bottom. Gross.
Next, add your spinach to the same pan and cook until it starts to wilt.
Once your spinach has started to wilt, make an opening in the centre where you can add your eggs and sprinkle will a little pepper.
Cover with a lid and let it steam away!
(Yes, I have blurred out the image - because it's early morning and my REFLECTION was in there... and nobody wants to see that before a few hours of primping!! ha!)
You'll know when they are cooked but still a little soft when the tops of the eggs turn cloudy white.
(OMG, so yum!)
All that's left is to dish it up with some fresh tomato and apple with a little nut butter.
Sprinkle a little salt on your tomato and off you go! Enjoy!

- tomatoes - 3/4 cp diced
