Banana Nut Granola
Add this delicious cereal crumble to yoghurt and fruit, over ice cream, or just eat by the handful!
Ingredients
- pecans - 1/2 cp, chopped
- walnuts - 3/4 up, chopped
- gluten free oats - 3 cps
- dark brown sugar - 3 tbs
- sunflower seed kernels - 1 tbs
- flax seeds - 1 tbs
- coconut oil - 1/4 cup
- pure maple syrup - 1/3 cup
- vanilla extract - 1 tsp
Instructions
- Mix in a bowl: Pecans, Walnuts, oats, brown sugar, sunflower seeds, flax seeds
- Heat on low until blended: Coconut oil, maple syrup, vanilla
- Whisk in one mashed banana to syrup blend and pour over oat blend. Mix well.
- Lay out on a wax papered cookie sheet.
- Bake 350 until lightly browned and clumping together – about 25 minutes. Cool and break a part. Store in an air tight container.
