Chardonney Chicken
Ingredients
- chicken breasts - 2 - skin on
- extra virgin olive oil
- feta cheese - 2 oz
- fresh tarragon, parsley, chervil - 1 tbs each, chopped
- shallot - 1 chopped
- white pepper
- chardonney - 1 cup
- chicken stock - 1 cup
- whipping cream - 1/2 cup
- butter - 4 tbs
- sea salt & cracked black pepper
Instructions
- Preheat oven to 450 degrees
- Clean chicken breasts and loosen skin from the meat
- In a bowl, mix together feta cheese and half of the fresh herbs together, split the portion and stuff 1/2 each under the skin of each chicken piece; pat to even it out
- Place chicken in a roasting pan, sprinkle with white pepper and drizzle with olive oil; bake until cooked through (approx 45-60 minutes) - check with a thermometer (165 degrees finished)
- Meanwhile, in a sauce pan, place shallot and chardonney, bring to a boil and reduce to about 1/4 cup
- Add chicken stock and reduce by half
- Add whipping cream and continue to reduce
- Add margarine one small piece at a time and stir to mix thoroughly before adding additional pieces
- Transfer mixture to a clean pan and add remainder of fresh herbs; set aside until chicken is done and then drizzle over chicken
