Chicken Kabobs
A deliciously pretty kabob that you can make in build in advance, and freeze to cook later.
Ingredients
- Marinade
- soy sauce - 1/2 cp
- pineapple juice - 1 cp
- brown sugar - 1/4 cp
- lemon juice - 1 1/2 tbs
- garlic powder - 1/8 tsp
- onion powder - 1/8 tsp
- ground ginger - 1/4 tsp
- Kabobs
- chicken breast fillets - 4, cut into approx 8 pieces each
- green pepper - 1 large, cut into bite-sized pieces
- pineapple chunks
- cherry tomatoes
- mushroom caps
Instructions
- In medium, non-metal bowl, combine all marinade ingredients, mix well.
- Place the chicken in the bowl and allow to sit for at least 1 hour if you can
- Alternate chicken and veggies onto skewers. NOTE: if you are using wooden skewers, soak in water for 30 minutes before using
- Place kabobs on grill and cook 10 to 15 minutes or until chicken is no longer pink, turning half way through
