Chicken Salad Sandwich
Ingredients
- lemon juice - 2 tbs
- olive oil - 1 tbs
- olive oil mayo - 4 tsp
- olive oil - 1/2 tsp
- skinless chicken breast - 1 diced cooked (steam it for 30 minutes)
- chives - 1 tsp chopped
- shallot - 1/2, chopped
- cucumber - 1/4 cup sliced , with skin
- 100% whole-grain bread - 4 slices
Instructions
- Mix together the mayonnaise and oil in a medium bowl. Add the chicken and mix well. Add the balance of ingredients and combine well.
- Make a sandwich using whole wheat brean and a little extra mayo.
