Green Onion Salmon Cakes

Instructions
- Steam diced potatoes until soft (approx 25-30 minutes)
- In a cast iron skillet, heat oil and place salmon fillets into the pan; salt and pepper (approx 5 minutes each side until salmon flakes)
- Remove the salmon from the pan and add to a mixing bowl; add potatoes green onion and egg
- IMPORTANT STEP - place into the refrigerator for up to an hour if you can to help set the cakes into their shape, or they will be crumbly... still delicious... but crumbly
- Heat more oil in the skillet
- Form mixture into 4 evenly-sized cakes and add to heated skillet; cook on each side for just a few minutes to slightly brown, and then serve with slivered green onions to garnish
- Serve with honey mustard sauce.
