Shrimp Pepper Stirfry
Born out of necessity, a lack of time and rumbling tummies... this lunch is quick to put together, full of flavour, and an easy way to use up some of those neglected veggies in the fridge (poor little veggies...).
Start with some thawed shrimp in a pan with the heated oil, add a generous sprinkle of Clubhouse Salmon Seasoning and a splash of white wine - just a splash... you just want the shrimp to sit in there for a bit... (And no, you can't - mustn't - drink the wine... it's lunch time... ) (Oh ok, just a sip, if you must ;o)
Once the shrimp is partially cooked (just a few minutes) throw in your peppers and celery. Season with a little salt and pepper.
You want to saute them until they are softened to your liking and the shrimp is completely cooked.
Now, here's where I get really lazy... when I make up bacon in the mornings, or rice for the night before, I will often cook up extra and leave it in the fridge. That way, when throwing together a lunch like this, you can just chop up some of that bacon and throw in a little of that rice... and voila!
Just let it heat through, split it up into two bowls and add a little dash of soya sauce if you like. This one is all about the salmon seasoning and rice. Yum!

Ingredients
- sticky rice - 1 cp, cooked/packed
- shrimp - 12, uncooked
- thick cut bacon - 3 pieces, cooked
- red pepper - 2 cp
- celery - 2 cp
- garlic - 2 cloves, smashed and coarsely chopped
- white wine - just a splash
- salmon seasoning - dash
- sea salt & cracked black pepper
- evoo - 2 tsp
Instructions

- Add in cooked rice and chopped bacon. Allow it to heat through and serve.
