Maple Squash
It’s Fall. Squash of all kinds can be found in abundance (at least here on the prairies). And you can’t go wrong with serving up a dish. This one is especially tender with just the right amount of sweetness too.
Ingredients
- butternut squash - 4 lbs, cut into thick wedges, seeds removed
- maple syrup - 1/3 cp
- water - 1/3 cp
- red pepper flakes - ½ tsp
- sea salt & cracked black pepper
Instructions
- Slice 4 pounds butternut squash into thick wedges and remove the seeds.
- Place cut-side up in a baking dish. Combine maple syrup, water, red pepper flakes and a very small amount of salt and pepper into a bowl; pour over the squash
- Bake 20 minutes at 350, then flip the squash and bake until caramelized and tender, 25 more minutes
