Roasted Acorn Squash
There’s nothing quite like roasted squash… Perfect from the Fall harvest!
Ingredients
- acorn squash - 1 (any variety)
- dark brown sugar - 1 tbs
- organic butter - 1 tbs
- sea salt & cracked black pepper
Instructions
- Preheat oven to 450 degrees
- Remove the stem and slice your squash in half (so each half is roughly even in size)
- Scoop out all of the seeds and stringy filling and discard
- Lay your squash on a baking sheet lined with foil
- Sprinkle brown sugar over each side
- Divide the butter between the two and place into the centre dip of your squash
- Sprinkle with salt and pepper and spray with olive oil cooking spray
- Bake until the squash is soft in the centre (this will vary on the size of squash 15-30 minutes – keep checking it)
- Serve hot to scoop the flesh out of the skin; discard the skin
