Slow Cooker Enchiladas
Want quick? Easy? Delish?? Well, look no further! It doesn’t get any better than this! I do a big crock pot, and then portion and freeze just the perfect amount for 2! Excellent for quick lunches and the portioned amounts keep my from over indulging ;o)

Ingredients
- chicken breasts - 3
- good quality salsa - 1 cp
- old el' paso fajita spice - 1/2 packet (low sodium)
- small corn tortillas
- iceberg lettuce - chopped
- quacamole
Instructions
- In a slow cooker, mix together salsa and fajita mix; add chicken and cook on high for 3 hours (or until chicken is cooked through)
- Using two forks, pull the chicken a part and stir into the sauce (the excess liquid will soak up)
- Layer your tortillas with a small amount of chicken, guacamole, and lettuce.
