Teriyaki Chicken & Rice
StirFrys are a great way to have a balanced meal... complete with your protein, veggies and more. I like to pre-make large batches and freeze them for quick and easy meals (one personal-sized Ziplok container will feed two people). And doing them in a slow cooker makes the process even more easy!
You can have them just as they are, or you can be creative and add in other ingredients at the time of cooking, such as shrimp, fresh or frozen veggies, and steamed noodles. Some of the pictures will be shown with these additions.
I also like to include sticky rice with mine. Your body breaks complex carbohydrates, including those found in sticky rice, into glucose, and then uses this glucose to fuel brain, liver and muscle function. The fiber in sticky rice also offers health benefits. It contributes to a high-fiber diet, which lowers your risk of heart disease, explains the McKinley Health Center at the University of Illinois.*
Ingredients
- boneless, skinless chicken thighs - 8
- onion - 1/2 cp diced
- garlic - 2 gloves minced
- organic honey - 1/2 cp
- katchup - 1/4 cp
- soy sauce - 1/2 cp
- olive oil - 2 tbs
- red pepper flakes - 1/4 tsp
- green pepper - 1, julienned
- 4 tsp cornstarch + 1/3 cp water
- sesame seeds
- green onion - garnish
- your favourite rice - (mine is sticky)
- sea salt & cracked black pepper
Instructions
- Place chicken pieces into a slow cooker
- Blend together onion, garlic, honey, ketchup, soy sauce, oil and pepper flakes and pour evenly over the chicken
- Sprinkle the green pepper on top and cook on high for 2 hours
- Remove the chicken pieces and dice, setting aside
- Add cornstarch thickening to slow cooker and cook on high until blended
- Add chicken pieces back into the sauce and sprinkle salt and pepper to taste
- Let warm for a while before serving to allow the flavours of the sauce to go through the chicken
- Serve over rice and sprinkle sesame seeds and chopped green onion
