Cottage Cheese Potatoes
A simple twist on garlic mashed to add in the extra goodness of cottage cheese.
Ingredients
- baby potatoes - 360 g
- lite cottage cheese - 1/2 cp
- almond milk - 1/4 cp
- garlic - 1 clove, smashed and chopped
- sea salt & cracked black pepper
Instructions
- Half the baby potatoes and steam for approx 30 minutes until cooked
- In a small sauce pan, heat on low the cottage cheese and garlic until the consistency of a melted marshmallow
- Add milk and bring to a slow bubble
- When the potatoes are cooked, whip together with milk, cheese and garlic mixture
- Add sea salt and cracked black pepper to taste
