Creamy Pasta & Cheese
Oh so creamy goodness with sneaky ingredients like coconut flour and Greek yoghurt…
Ingredients
- macaroni or other - 2 cp (shown with spirals)
- unsalted butter - 2 tbs
- coconut flour - 1 tbs
- 0% Greek Yoghurt - 2 tbs
- buttermilk - 1 cp
- low milk fat mozza - 1 cup (shredded)
- mascarpone cheese - 1/2 cp (or low calorie cream cheese)
- sea salt & cracked black pepper
- white pepper - dash
- mustard powder - dash
Instructions
- In a pot of salted boiling water, cook the pasta, drain and set aside (remember to add the salt AFTER the water starts to rapid boil)
- In a pan, melt butter and add coconut flour, mixing together and cooking for just a few seconds until well blended and almost creamy
- One at a time, add buttermilk, yoghurt and mascarpone cheese, blending until smooth; sauce will be thickened
- Continue to heat on low until sauce is fully blended
- Add mozza and allow to melt completely
- add salt and pepper to taste, white pepper and mustard powder
- Toss with your pasta and serve
