Grilled Salmon & Veggies
If you've been reading many of my recipes, you'll know that I'm a big fan of one-pot dishes. I mean, hubby does the dishes around here (a good catch, ladies)... except the pans and non-stick stuff. That all has to be cleaned by hand, and so I take care of those.
Hence... one-pot wherever possible!
We love salmon around here. We have our go-to salmon dishes, but I thought I'd try to mix it up and get a few more veggies than normal onto the plate.
Start by putting half the oil into your pan and heat. Add garlic, celery and peppers. Saute until the pepper start to soften.
Make a space in the centre of the pan and add your salmon. Season with salt and pepper, and cover until the underside starts to brown. then flip.
(You'll see that I used a cross cut of the salmon. If you do this, there is likely a centre bone in there. Don't try to cut it out or you'll leave all little bones behind. Just cook with the bone in, and then you can easily pull the meat away from the centre once you start eating it.)
Once it flips once, sprinkle a little more pepper (only) and spoon the honey/mustard blend over both pieces. Cover and let the fish finish cooking.

Once the fish flakes with a fork, remove it from the pan and set aside. Add your spinach and drizzle the remaining oil over the veggies. you don't want to wilt the spinach - just warm it slightly and toss with the garlic and oil (for like 5 seconds) and then serve it up!

- celery - 1.5 cp sliced
- red pepper - 1.5 cp sliced
- fresh spinach - 1.5 cp
- garlic - 4 large cloves
- evoo - 2 tsp
- sea salt & cracked black pepper
- grainy mustard + organic honey - blend 2 tsp each together
