Salad Rolls (w/chicken)
So, this one I cannot take credit for. Mandy, the sweet woman who pampers my nails every couple of weeks, shared this little one with me. I am including it in the appetizer category because, well, even though we usually have them on their own as a meal, she often will serve them as pickies for her friends and family.
Also, to cut down on the work, she will soak the rice paper, one sheet at a time, and put them on individual paper plates so that her guests can simply add in whatever ingredients they like and roll away! Genius in my opinion. All you have to do it chop up the fruit/veggies and cook the chicken!

To make things easy, start by prepping all of your materials, including a bowl of very warm water for the rice paper (your chicken is already cooked by now, so do that step in the directions below first):
You will see that I place down a good quality paper towel to lay the wet rice paper on (don't use one that will fall apart when it gets wet!), or you can use a clean only-for-rolling dish cloth.
Dip one sheet of rice paper into the water at a time. Give it a few seconds and the paper will go from hard and brittle to softened. Take it out of the water, shake it slightly to get rid of some excess water, and place it on the paper towel. It will get even softer still so you don't have to soak it long - maybe 5 seconds or so if your water is nice and warm.
Next, start piling on your toppings. You don't need a lot per roll and I usually find I always have more toppings than we use.
Then, starting from the bottom, roll up your rice paper, tucking in the sides as you go, until it is nice and tight. Careful not to puncture the paper if possible, but if you do... meh... who cares!
That's it! Now quick! Hurry up and take a pretty picture before hubby knows they're done and starts picking them off one at a time!!

- Make the chicken
- chicken breasts - 8oz, finely diced
- garlic - 2 cloves, smashed and chopped
- olive oil - 2 tsp
- Rolls
- rice paper - 8 sheets
- cucumber - 1 cp, finely diced or julienned
- avocado - 1/2, finely diced or julienned
- mango - 1 cp, finely diced or julienned
- carrots - 1 cp, finely diced or julienned
- sticky rice - 1 cp prepared
Instructions
- Heat the oil in a skillet and add garlic for approx 30 seconds. Add finely diced chicken (hint - if your chicken is still a little frozen, it is easier to chop!) Stir frequently until cooked through and no longer pink.
- While your chicken is cooking, chop up your veggies/fruit.
- Lay out all of your prepared ingredients plus a wide bowl of very warm water.
